Used pudding rice as I figured any short grain rice out to do and I was right. A handful of new potatoes and 2 big carrots, cut into small chunks and pre-cooked a bit in the microwave to speed things up. Onion, pepper, mushrooms and baby corn. A single stock cube for extra flavour, plus thyme, rosemary, sage and parsley. And a bunch of cubes of cheese stirred in right at the end just before serving. Served 2 (would have done 3). half a sin each and a healthy extra A for the cheese.. Must write it up as a recipe for my slimming class.
